broiche

Being on a budget mean i have to think of way to feed my kids and now that they go to public school i now have to start to give them something for break time ... i`m not much of a baker and i hold my hand up to that ... so i try to find things that are simple enough and dont cost too much money to make and the kids will like


so broiche is what i thought i would try today .... i have been wanting to try this for a long time and finally i did


i got the recipe form my friend  but what i did is join two of them together  so from this one  and this one and this is what i came up with







so what do you think ?

    125ml warm milk
    100ml warm water
    1 egg beaten
    60g melted butter or margarine
    zest of 1 lemon
    70g sugar
    425g strong plain flour
    1 1/2 teaspoons easy blend yeast

    Method:

    I have a breadmaker so I put the ingredients above into the breadmachine in the order listed and use the pizza or dough setting. This setting will mix, kneed and rise the dough but will stop before baking.

    Alternatively, mix the dry ingredients together, combine the wet ingredients and then gradually kneed the wet ingredients into the dry and kneed until you have a smooth, flexible dough and leave to rise in a warm place for 1 hour.

    Once the cycle has ended, knock back the dough and cut into 12 pieces.

    Put a chunk of dark chocolate in the centre of each piece of dough:

    Ingredients

    180ml warm water

    3 tablespoons milk powder

    2 tablespoons orange flower water

    100g melted and cooled butter

    3 eggs beaten

    3 tablespoons sugar

    500g all purpose flour

    1 tablespoon instant yeast

    Kiri portions or Nutella

    1 egg beaten with 3 tablespoons milk for glazing

    honey to pour over after baking

    Soulafa’s method: Sift the flour into a large bowl and make a well in the centre and add the eggs, yeast, sugar, milk powder and salt, add the water little by little and mix until a ball forms. Knead well for a couple of minutes and then add the butter. Knead until all the oil is absorbed. Cover with a damp tea towel and leave to double in volume.

    Knock back and then divide into little balls about the size of a walnut. Fill each walnut with a quarter of a portion of Kiri or half a teaspoonful of Nutella then seal the dough around the filling.

    Grease a baking dish and place the balls into the dish so they are touching each other. Leave to rise for a few minutes. Heat the oven to gas 4/180 deg C/350deg F. Glaze the brioche with 1 egg yolk beaten with 3 tablespoons milk and then sprinkle with nigella seeds or sesame.

    When the brioche comes out of the oven glaze with heated honey.

    My bread machine method: I don’t buy milk powder and I don’t want the flavour of orange flower water in this brioche so instead of the first three ingredients (180ml warm water, 3 tablespoons milk powder, 2 tablespoons orange flower water) I just use 190ml slightly warmed semi-skimmed milk.

    Place the ingredients into the breadpan in the order listed and set to the pizza or dough cycle. When the cycle is completed remove dough from the pan and proceed to roll into small walnut sized balls; flatten out each ball and place a blob of about 1/3 teaspoon of Nutella into the middle and carefully seal the edges to form a ball. You may find this easier if the Nutella is refrigerated and slightly hardened or you could just as easily use a few chocolate chips.

    Place the balls into a greased, round baking dish so they are all touching, glaze with a little of the beaten egg and leave to rise for 20 minutes.

    Bake in a pre-heated oven for 20-30mins (180C/350F/Gas4) Drizzle about 3 tablespoons of hot honey over the brioche as soon as it comes out of the oven.

    This mixture was enough for me to make one large and one small batch.

    NB: Make sure the yeast you are using is INSTANT yeast, it will say so on the box/tub and comes in the form of tiny strands, usually in 11 g sachets. If you are using non-instant yeast (looks ike tiny balls) you will need to follow the box instructions and mix with some warm water/milk and sugar and leave to froth for 10 minutes before using.

Asalam wa alikum So as you know i`m not really one for baking ... but when a good recipe comes my way i must tell you about it I have had this recipe for a while and never got around to trying it so as i was making my muffin bread i thought let me try this one ... Its a french loaf and so simple and easy 2 cups of water (warm) 2 tbsp sugar 2 tbsp of yeast instant 2 tbsp of salt ... i felt it was a bit too much so i reduced it to 1 2 tbsp of oil (veg) 5 cups of flour mix well and knead dough then allow to rise punch back the dough then place on a tray allow to rise again and place in a hot oven it takes about 20 mins or so and masha`allah what a lovely bread we toasted it and had butter and jam for breakfeast enjoy and let me know how it works out

Pocasi/ split green pea soup

Asalamu alikum Well it sure has been a long time since i posted so i thought let me share this Pocasi recipe with you while i remember This soup is made from split green peas first i wash the peas and then add them to my pot (i used a pressure cooker) i added onion ... garlic..... i diced up carrots ...courgettes...and potato into  really small bits and added to the pot i also added black pepper....salt ...cumin...and razel hanut.... fill with water and placed lid on  and allowed to cook about 30 to 40 mins in total ... then let the pressure out and open then  stir.... if you need more water add and allow to cook towards the end add some tomato puree and allow to thicken up a little .... when i make this i do not use oil and i should say that this type of soup will continue to thicken and even the next day you will need to add more water to thin out ... but masha`allah is a really nice soup

La Koka (algerian pizza)

we are one for pizza and this ramdan you can believe that alot of pizza was made  and eaten .... but last year i remember my dh coming home and saying i will teach you a new one ...so i said go ahead masha`allah it was delicious ....the amazing thing was their is no cheese on this pizza ...(what i hear you say).... yes no cheese so basically  i use the same pizza dough as here then i spread just tomato puree and not the sauce i usually use all over the dough ... then i cut fresh tomatoes in circles and for my dh we take the seeds out as he believes their not good for the stomach ...and i place these around the dough and into the middle .... now what make this pizza it i place sardines that have been salted and the salt remains on it  this i open and take the bones out and tear it  into little pieces and place aound the pizza when finished place in oven till dough is cooked then take out and brush some oil normal oil over the top and cut and eat ... believe you will love the salt
