Carrot and Courgette Fritters

Sometimes it is so hard to find things to put on the table and especially when some of your kids are a little fussy ....also i hate to throw out veg that might start to go off a little because they didnt get used  ....till just recently when my friend was here and mentioned that she made some carrot and courgette fritters and that all her family loved it ..... now the amazing thing was that i had been browsing for a while and a few of the sites i came across had the courgette fritters and i really wanted to try them but i was afraid  that they would not be eaten and i would end up throwing them out ... but after listen to my friend i decided to biet the bullet and masha`allah i`m so happy i did ... they have become a favorite in my house so much that dh loves them too ... now i couldnt remember exactly what my friend added to her but i made mine like this




2 big courgettes
About 4/5 carrots (this depends on size )
2 eggs
about 3 tbsp of flour .. (you can add more if you feel the need)
black pepper
salt
and 1 small onion


all you do is grate carrots and courgettes and if you like place in a cloth and squeeze out the water form them.... then dice the onion really small add your eggs and flour along with the pepper and salt and mix well

then all you have to do is fry them ...

NOTE: when placing the spoon full amounts into the oil dont press them down leave them as they are ....

and thats it simple and easy and yummmmyyy ... go on give it a try

  2. oh yes it is very easy and you could dd garlic to it too and play around with it .... and yes it`s even nice cold so i think it would be great for your daughter too ....jazak`allah khair for stopping by

  3. I will definitely give these a go, perfect snack food for a vegetarian thank you! Many years ago I lived in the south of Italia, and the people there don't eat a lot of meat (compared to the Irish & English!) and my friend's mother made something similar without the carrots. I loved them so much, she would make them often...just for me :)

    1. oh masha`allah aisha ... this is great .... they can also be done just with courgettes and without the carrots ... or one day we had very little veg left so i ended up doing the carrots and courgettes and potatoes and they were lovely too masha`allah

Asalam wa alikum So as you know i`m not really one for baking ... but when a good recipe comes my way i must tell you about it I have had this recipe for a while and never got around to trying it so as i was making my muffin bread i thought let me try this one ... Its a french loaf and so simple and easy 2 cups of water (warm) 2 tbsp sugar 2 tbsp of yeast instant 2 tbsp of salt ... i felt it was a bit too much so i reduced it to 1 2 tbsp of oil (veg) 5 cups of flour mix well and knead dough then allow to rise punch back the dough then place on a tray allow to rise again and place in a hot oven it takes about 20 mins or so and masha`allah what a lovely bread we toasted it and had butter and jam for breakfeast enjoy and let me know how it works out

Pocasi/ split green pea soup

Asalamu alikum Well it sure has been a long time since i posted so i thought let me share this Pocasi recipe with you while i remember This soup is made from split green peas first i wash the peas and then add them to my pot (i used a pressure cooker) i added onion ... garlic..... i diced up carrots ...courgettes...and potato into  really small bits and added to the pot i also added black pepper....salt ...cumin...and razel hanut.... fill with water and placed lid on  and allowed to cook about 30 to 40 mins in total ... then let the pressure out and open then  stir.... if you need more water add and allow to cook towards the end add some tomato puree and allow to thicken up a little .... when i make this i do not use oil and i should say that this type of soup will continue to thicken and even the next day you will need to add more water to thin out ... but masha`allah is a really nice soup

La Koka (algerian pizza)

we are one for pizza and this ramdan you can believe that alot of pizza was made  and eaten .... but last year i remember my dh coming home and saying i will teach you a new one ...so i said go ahead masha`allah it was delicious ....the amazing thing was their is no cheese on this pizza ...(what i hear you say).... yes no cheese so basically  i use the same pizza dough as here then i spread just tomato puree and not the sauce i usually use all over the dough ... then i cut fresh tomatoes in circles and for my dh we take the seeds out as he believes their not good for the stomach ...and i place these around the dough and into the middle .... now what make this pizza it i place sardines that have been salted and the salt remains on it  this i open and take the bones out and tear it  into little pieces and place aound the pizza when finished place in oven till dough is cooked then take out and brush some oil normal oil over the top and cut and eat ... believe you will love the salt
