betingel

so it`s the season for betingel (aubergines) .... at first i really didnt like them but as time went on i became fond of  it .... their are may ways to cook them but here it`s either just fried as this my dh like ... or i like the in a chukkuka  with tomato and garlic and spices and cheese and eggs and finished off in the oven ..... so go on give it a try .... we sure ate it all .....

the joy of summer

so summer holidays are here soon and the kids are just preparing for their exams and once thats done schools out ... so it will be back to cooking lunches and dinners every day ...... while their in school i dont need to do lunches as they stay in school all day and get feed their .... but with them being at home it means having to cook ... but the best thing about summer it is easy cooking .... all light lunches which will make me happy and one of those lunches is this potato and spinach mix such a simple dish fry some chips and place them in bottom of oven dish at the same time chop up spinach (i prefer them chop small ) and place in a  little water and boil ... you can use baby spinach here just place a little butter in a pan and add spinach and allow to wilt then when spinach is cooked drain out water and allow to cool down ... then you need to take the spinach into your hands and squeeze the remainder of water out and place the spinach over your chips the d...

dinner today

naughty me hasn`t really being posting .... sorry for that ... but as you know life gets busy from time to time espically when my dh is here so today as usual i`m always think what to cook and i get fed up by it .... but my kids decided for me they all wanted matoum which is an algerian dish so as always too i have to make something along side with this as my dh like choice so i also made chlitha matoum is made with chick peas garlic lot of garlic black pepper, salt, cumin, and carwia ,this is for the sauce the mince is mixed with the same spices and an egg and made into ball and added and when everything is nearly cook you add some tomato puree the chlitha is made from blacken peppers and placing in a bag to sweat it out then you chop up tomatoes and garlic and black pepper and salt and plack into a frying pan ... then cook til tomato is soft .... while this is cooking remove the skin from the peppers and slice in long strips and then add to the tomatoes ... now some ppl...

what have i been up to

wow it has been a busy few weeks with kids back to school and my dh not here ..... it can take up alot of time but alhamdu`lilah so what have i been up to.... well i decided to make a forum for muslim women that come from all over the world  it took a little while to get it to the way i wanted and have now put it out their  http://muslimahscorner.forumalgerie.net/  so far so good  it has been up and running for about three days now and i`m happy with it ... so if your interested drop by ... even if your not muslim and wish to know more about islam  we do have an islamic section but their is one thing ... this forum is for women only .. we will not allow men on ... the reason for this is so our members can relax and no that they can talk about anything

a new home

so after throwing it around in my head i decided to change over my blog to blogger as i prefer the layout better... and now i`m happy so while doing that i decided that i wanted an easy day and could be bother to do much cook ... with my hubby not around i can take it a little easier so all i did was put some chicken in the oven with black pepper, salt, thyme and i cut up some onions, garlic and tomato and potatoes and drizzled over a little oil and placed wedges of lemon as well and covered with tin foil when nearly finished take the tin foil off to allow to brown

home is where the heart is

so it`s been a while since my last post  ... well what has happened ..... i`ll tell you.....   the kids are on holidays from school with today being the last day of them ... so we will be back to a school time routine .... yayyy for me ... not ....   well while we had the holidays my dad came to visit for 6 days which really wasnt enough but that was all the holiday tome he had left .... so how did it go ..... it was great and he loved it over here  .... he could speak no arabic  but ppl understood him and really liked him ... even enough to give him some free things ... believe me that made his day ....... he loved the country and insha`allah will come back next year for two weeks   but one of the great things was for me being able to cook some home cooking things that i grew up with as the rest of my family dont like it as it is to do with gravy  .... so what did i make well it`s mince with carrots and peas and onion .. black pepper ..salt ....and thyme and a stock cube...

so it`s that time of the year again and the peas are in season and so are broad beans ..... so all you will smell coming from ppl`s homes is misfoof ....... to those who dont know this it is cous cous with peas and broad beans steamed and mixed into cous cous with either butter or ghee or olive oil   in my house i end up doing three different ways  ... 1 is with olive oil as dh loves that ... the other is with butter as i cant stand olive oil and third is with butter and no steamed veg as two of my kids wont eat it that way .... and all of this is washed down with leban (butter milk) but once summer comes in then it`s made with grapes
